This is not a trout but brook trout. There are at least that seems very small to be sacrificed ...

Here in Quebec it's called speckled trout. And regardless of their size when you take one, you can not return to the water.

Thank you, they were fabulous these trout. Cooked with bacon curls, lemon juice and chives. Yum delicious.
