Author 'Papatte' : SARCODON IMBRICATUM (hydnum nests, ecailleux or epervier) it reaches circonferences ranging from 5 to 20 cm, see 30 cm. The fungus grows in the mountains, in the Alps and forests of conifers, between August and November. It can be used as a condiment once dry or laundered and put vinegar (personally it is as ca that I the preferred!).

Hello ! I am well acquainted with this mushroom, it is a sparrow hawk , I harvested every year ! It is really very good with the vinegar, what to do after you have cut into strips or single piece it is a choice me, I put half vinegar half water, if you like the vinegar put in 75% and 25%, but it is strong enough. Cook 20 min, this is the min time for cooking all the mushrooms according to the cantonal laboratory. Then put in jars, close the well, if you don't open it you can keep it for a few years, if not once open eat-don't forget that these are fungi, therefore, do not let them hang around. In the vinegar you can put herbs and/or seeds of mustard or pepper, but a simple wine vinegar, or with herbs cheap large area just quite. However, it is really not good if you want to make a mushroom sauce. This is a good appetite !

Once dried, you can also use it to improve your sauces (nice peppery taste), rehydrate with a hint of white wine and put it in your omelets... delicious ! A bear greedy...

I love the photo. It is very well done. I am looking for this fungus, and I find sometimes. The vinegar is excellent and dried and then put powder in exchange of the eternal pepper. A little bit more.

In my opinion it is the best mushroom in vinegar. It goes very well to accompany the raclette.

This fungus to the spine is a 'Hydne nested' (Sarcodon imbricatus) and it is edible. Look forward to the advice of Géna and we are always careful. Very beautiful photo for identification : bravo and thank you.
